Harada Brewery Co., Ltd. has produced sake in the historic Sannomachi district of Takayama, Gifu Prefecture, since 1855, using the harsh winter climate of the Hida mountains for traditional cold-weather fermentation. The Sansha brand is known locally for a dry, sharp profile that preserves the rice's natural umami and sweetness. The brewery also explores flower yeast cultured from plant nectar, broadening its range while staying rooted in Hida brewing tradition.
