Founded in 1922 at the foot of sacred Mount Hakkai in Niigata's Minami Uonuma, Hakkaisan Brewery has built its reputation on a single guiding principle: producing sake of the highest quality that pairs beautifully with food. Snowmelt water filtered through the mountain provides the soft, mineral-balanced base for every batch, while the brewery insists on hand-crafted koji rice and slow, low-temperature fermentation. The result is a clean, crisp style known as tanrei karakuchi, with elegant umami and a refreshing finish that has earned Hakkaisan recognition across Japan and internationally.
