Sansha Ginjo Hiyaoroshi Hanakobo Dukuri is an autumn release from Harada Brewery in Hida Takayama, brewed with flower yeast and aged through summer before being released without additional pasteurization as a hiyaoroshi. This seasonal maturation softens the sake and integrates its floral, fruity character derived from the abelia flower yeast into a rounder, more complex profile. The Hida cold-winter brewing method used by Harada underpins its well-structured, dry base.
