Shidaizumi Brewery, established in 1882 in Fujiedashi, Shizuoka, draws its water from the Setogawa River basin, a medium-soft water low in iron and manganese that supports clean, delicate fermentation. Guided by what the brewery calls the aesthetics of the supporting role, the sake is crafted to complement food rather than dominate it, featuring a gentle acidity, fresh fruit-like aroma from Shizuoka yeast, and a sharp finish over lingering richness.
