Matsuse Sake Brewery has been family-owned for six generations since the 1850s, drawing water from 120 meters underground via the underflow of the Echigawa River on the eastern shore of Lake Biwa in Shiga Prefecture. The Matsunotsukasa brand is guided by a philosophy of gratitude toward the land, with contract-farmed local rice and a commitment to expressing calm and tranquility in every bottle. Junmai expressions are brewed using the traditional Kimoto method, producing natural umami and pleasant acidity underpinned by a crisp finish.
