Le taux de sake à appellation spécifique atteint 98 %. Le brassage n'est pas entièrement artisanal. Nous visons un meilleur sake en ayant recours aux mains humaines quand cela est nécessaire, et à la réflexion quand l'esprit est sollicité. Le riz utilisé provient de cultures contractuelles à Bizen-cho, et la levure de pomme, propre à notre brasserie, a su s'imposer dans son époque. Nous livrons ces sake élaborés avec soin aux clients sans filtration.
