De la destilería
Fundada en 1886 en Shiwa-cho, Shiwa-gun, prefectura de Iwate, cuna del Nambu Mori, la destilería ha sido dirigida durante generaciones por un propietario que ejerce también como maestro cervecero. Hoy la quinta generación, Yuko Yokosawa, lleva las riendas. Mantiene la filosofía de 'no como una empresa, sino como un negocio familiar', con el objetivo constante de transmitir la tradición e innovar técnicamente. El arroz usado principalmente para la elaboración es el 'Gintome', el 'Gin Ginkin' y el 'Kono no Ka' de Iwate, preparados con agua blanda (agua subterránea del río Kitakami). El objetivo es un sake con una nota sólida y suave, claro y delicado.

1886
Tokuichi, the 4th-generation head of the Yokosawa family (originally from Wakasa, present-day Fukui Prefecture, and previously running a koji shop), founded the sake brewing business out of his passion for sake making, marking the start of Tsukinowa's history.
1991
Daizo Yokosawa, the 7th-generation head of the Yokosawa family, became owner-toji, personally directing sake production while also serving as the family's head.
2005
Upon the company's incorporation on November 1, Yuko Yokosawa became toji (master brewer), and sake production began under a new structure.
