Junmai Daiginjo elaborado con Yamada Nishiki pulido al 40% en Yukitsubaki Shuzo en Kamo, Niigata, cervecería exclusivamente junmai desde 2011. El sake es una expresión muroka genshu (sin filtrar con carbón y sin diluir) con una sola pasteurización para minimizar el daño térmico, ofreciendo una dulzura suave, fragancia afrutada y un final limpio y elegante.
