Timeline
- 1855During the late Edo period (Ansei 2), the brewery began sake production in the old castle town district of Sannomachi in Hida, then directly administered by the Tokugawa shogunate. The founder, Uchiedaya Chogoro, had previously been a village headman in the neighboring town of Kokufu before turning to sake brewing.
