Un brassage obstinément préservé depuis plus de trois cents ans depuis l'époque des Tokugawa, dans ce qui était alors dit être Notoya. Le riz de haute qualité de Niigata et l'eau claire des pays enneigés. Le sake emblématique 'Naka' est né des riches bénédictions de la nature et du savoir-faire d'Echigo Mori.

Founded at the current location (Nagahama, Joetsu) in the 20th year of Kan'ei.
1943
Renamed the brand from "Kiminomatsu" to the current "Notaka" (Noutaka).
1953
Won an award of excellence at the 1st Kanto-Shinetsu Regional Taxation Bureau Sake Competition.
1955
Incorporated as a joint-stock company with 5 million yen in capital (first president Kimi Tanaka) and built a new kura.
1956
Won an award of excellence at the 3rd National New Sake Competition.
1958
Rebuilt the koji room with modern facilities.
1989
Won the top prize (first place) at the 49th Kanto-Shinetsu Regional Taxation Bureau Sake Appraisal.
