Sakehitosuji is produced by Toshimorishuzo, founded in 1868 in Bizen, Okayama Prefecture, and is closely tied to the revival of Omachi, a centuries-old sake rice that had nearly disappeared. The brewery is credited with restoring cultivated Omachi from the Akaiwa district of Okayama, and their Akaiwa Omachi line has earned national recognition, including selection as the toast sake at the Emperor's Birthday Reception in Taiwan in 2026. The house philosophy holds that true local sake requires local rice, local water, and brewing attuned to the local environment.
