Hakkaisan Junmai Daiginjo Yukumuro Jukusei 8 years - Junmai Daiginjo sake from Hakkaisan Brewery Co.,Ltd., Nigata
Description

Utilizing the power of nature in Uonuma, one of Japan's heaviest snowfall areas, this sake is aged for eight years in a low-temperature storage "Yukimuro" that stores 1,000 tons of snow. By aging at a low temperature of around 3 degrees Celsius for a long period of time, we were able to create a high-quality aged sake with a smooth and elegant flavor while retaining a light taste. It is a sake that symbolizes eight years of Hakkaisan, and contains eight eight, ha ha ha ha... and auspicious laughter.

Much richer and umami forward than the 3 year, but still has that underlying lightness. Finishes dry. Surprisingly colorless for the age.
