花巴 山廢四段 生酒

山廢的野生酸味。採用「四段掛け」,使粗獷的酸帶有甜味,釀成一款均衡協調的清酒。自古以來用於釀造的四段掛け有多種形式,包括蒸米四段、糯米四段、酒母四段、酵素四段、甘酒四段等。吉倉採用的是「蒸米四段掛け」,即將蒸熟的米加入醪中(與仕込相同的酒米)。正因為工藝簡單,需要把握醪狀態、平衡發酵與糖化的感知力,但味道的意圖能直接傳達。由於以無濾過生原酒直接裝瓶,在保持新鮮酸味的同時,與四段掛け帶來的甜味醇厚感相平衡,讓人盡享米之果實風味。
