Hananoka Sake Brewery was founded in 1902 in Nagomi, Kumamoto Prefecture, after the Kanda family received a spring water source from Myoken Shrine and began brewing; the name was inspired by the scent of plum blossoms drifting around the brewery at its founding. Today under its sixth-generation owner, the brewery maintains two distinct lines: Ubusuna, which pursues a strict philosophy of indigenous terroir using heritage rice varieties and revived horse-plow farming, and Hananoka, crafted with Kumamoto No. 9 yeast to serve as the region's beloved local sake.
