Saijo Co. (西條合資会社) has been brewing in Kawachi Nagano, Osaka, since 1718, producing Amanosake, a brand whose name and identity are rooted in the historic temple sake tradition of the nearby Amano Kongonji, a mountain monastery whose brewing was praised in medieval times as Amano is incomparable and enjoyed by Toyotomi Hideyoshi. The style was discontinued after the Edo period and revived in 1971 with the support of Kongonji Temple and the local community. Rather than pursuing dry sake, the brewery emphasizes umami and natural sweetness, positioning Amanosake as a sake suited to pairing with food.
