Yukisuzume Sake Brewery was founded in 1915 in Matsuyama City, Ehime Prefecture on the island of Shikoku, where approximately 40 breweries contribute to a sake culture shaped by the dual influence of the Seto Inland Sea and the Uwa Sea. The brewery's name, meaning snow sparrow, evokes the quiet cold of winter brewing season central to its craft. Ehime's diverse geography, from coastal plains to the Shikoku mountain range, provides both the soft water and the climate conditions that define the region's sake character.
