Established in 1830 near the gates of Fujisan Hongu Sengen Taisha shrine in Fujinomiya, Shizuoka, Fuji Takasago Sake Brewery built its identity around water that filtered through Mount Fuji's volcanic rock over roughly 100 years, emerging crystal clear at a constant 5 degrees Celsius. Successive generations of Noto Toji master brewers have shaped the Takasago style through yamahai brewing, a technique that leverages the naturally soft groundwater to produce sake with a smooth attack and faint sweetness distinct from typical yamahai expression. The brewery has maintained this mountain water heritage for nearly two centuries alongside open sake experiences for visitors.
