Sunshunakaya

Sunshunakaya is brewed by Fuji Takasago Sake Brewery, founded in 1830 in Fujinomiya City at the gates of Fujisan Hongu Sengen Taisha, where the original signboard bearing the shop's name Nakaya still hangs today. The brewery specializes in the yamahai method, inherited from the Noto toji lineage, using water from a natural underground spring that took approximately 100 years to filter through the granite of Mt. Fuji, arriving crystal-clear and extremely soft at a near-constant five degrees Celsius. This ultra-soft water yields a yamahai style that is unusually gentle and soft, contrasting with the bold character typical of the technique, and the brewery has earned gold at the International Wine Challenge in the traditional sake category.
