Yamada Nishiki polished to 48% defines this yamahai daiginjo from Fuji Takasago Sake Brewery in Shizuoka. Combining the yamahai fermentation method with daiginjo-level polish produces a layered sake with the lactic depth of yamahai and the refined aromatics of high-polish brewing. It received the Platinum Award at the Kura Master 2023.
