Emishiki Shuzo was founded in 1892 in Minakuchi, Shiga Prefecture, along the old Tokaido highway, and named its flagship brand with the wish that sake could bring laughter and connection through every season. Under fifth-generation brewmaster Takashima Mitsunori, the brewery commits to additive-free, pure rice brewing using Shiga Prefecture contract rice and two distinct spring water sources blended according to each sake's character. The house style is built around clean sweetness rather than aromatic intensity, achieved through natural fermentation and unfiltered, unadjusted bottling.
