Description

Emishiki Junmaishu is the core pure rice expression from Emishiki Shuzo in Koka City, Shiga, founded in 1892. The 5th-generation owner Takeshima Mitsuyoshi brews with no alcohol, enzymes, or accelerators, using kimoto or self-cultivated lactic starters and traditional sase-shiki basket pressing with 100% Shiga contract-farmed rice for a clean, honest junmai with characteristic depth.
