Description

Emishiki Shuzo, Shiga's only all-junmai brewery founded in 1892 in Koka, ferments this unpasteurized junmai ginjo using the ancient kimoto method with 100% Shiga-grown rice and presses it by hand via the labor-intensive funa-shibori technique. The fresh nama character delivers lively citrus and stone fruit aromatics, while the kimoto-derived natural acidity provides texture and a clean, vibrant finish.
