Founded in 1778 in Tsuruoka City, Yamagata Prefecture, Fuji Shuzo produces Eiko Fuji, a brand whose name is deliberately palindromic in Japanese, a design choice the brewery ties to a philosophy of brewing with no front or back. The brewery converted to four-season production after major cellar cooling investment, enabling year-round release of fresh nama sake and a lineup that cycles through more than thirty distinct bottlings per year using a wide range of Yamagata-grown rice varieties.
