Description
Eiko Fuji's 5-Year Aged Daiginjo Koshu from Fuji Shuzo in Tsuruoka, Yamagata, uses Yamada Nishiki polished to 35% and matured for five years, developing the amber hue, dried fruit, and caramel depth that characterize premium aged sake. From a brewery founded in 1778 that is primarily known for vibrant, fresh muroka nama genshu expressions, this koshu represents the opposite end of the aging spectrum in the same pursuit of quality.
