Mori no Kumasan Junmai Daiginjo Murokanamagenshu from Fuji Shuzo in Tsuruoka, Yamagata, is brewed with the rare Mori no Kuma-san sake rice variety, polished to 50%, in an unfiltered, unpasteurized, undiluted expression from this 1778-founded Shonai Plain brewery. The playfully named rice variety, like the beloved Japanese children's character it references, produces sake with a gentle, charming sweetness that belies its daiginjo-level polish.
