The Asagao (Morning Glory) Label Junmai Ginjo from Fuji Shuzo in Tsuruoka, Yamagata, uses Yamada Nishiki polished to 50% and takes its name from the delicate blue morning flower that blooms at dawn, a visual expression of the sake's fresh, seasonal character. From this 1778-founded Shonai Plain brewery now in its 13th generation, it delivers the clean, fruity elegance typical of Yamada Nishiki at the ginjo level.
