Brewed specifically for submission to Japan's prestigious National New Sake Appraisals, the Kanpyokai Jikomi Daiginjo from Fuji Shuzo in Tsuruoka, Yamagata, uses Yamada Nishiki polished to 35% for competition-level precision. This 1778-founded brewery, whose young toji Kodai Kato won a gold medal at the National Japan Sake Competition, brings that same competitive standard to this rarely offered expression.
