Kanzawagawa Shuzojo was founded in 1912 near the Kanzawa River in Shizuoka Prefecture after a search for water ideal for sake making, and named the brand Shosetsu in honor of Yui Shosetsu, a local strategist who lived with unflinching integrity. For over a century the brewery has pursued a harmony of the five tastes through soft Kanzawa River water, the same river that once refreshed travelers on the historic Tokaido road.
