Okura Honke, founded in 1896 in Kashiba City, Nara Prefecture, is one of the rare breweries that applies the yamahai method to virtually its entire lineup, from junmai to ginjo. After halting production in 2000, fourth-generation owner Takahiko Okura revived the brewery in 2003 under the Kinko and Okura labels, basing every expression on home-grown Hinohikari rice and traditional water-starter fermentation.
