Ittekiniteki is the signature brand of Shigaizumi Shuzo, located in Nakano City in northern Nagano Prefecture, where the toji Yoshiki Nakayama, a graduate of Tokyo University of Agriculture's brewing program, has led production since 2009. The brewery draws its brewing water from a spring at Ryukonji temple, and under Nakayama the sake has developed a style described as fruity, juicy, and gently warming. The brand name, meaning roughly drop by drop, reflects a philosophy of unhurried, careful brewing.
