Asahikawa Shuzo is one of only three sake breweries in Asahikawa, the only city in Hokkaido with multiple active sake producers, situated near the Daisetsuzan mountain range. Rice cultivation in the region stabilized in the 1890s, and sake brewing followed almost immediately, taking advantage of the area's cold winters and abundant clean water from the mountains. The brewery is part of a small but distinctive Hokkaido sake tradition defined by cool-climate fermentation and locally grown rice.
