Timeline
- 1901Founded in Meiji 34 (1901). For many years, the flagship brand was "Shirotaki," named after a waterfall behind the brewery.
- 2007With the brewery on the verge of bankruptcy in 2007, successor Yamamoto made the bold decision to abolish the traditional toji (master brewer) system. In an all-or-nothing first year of brewing, a miraculously delicious junmai ginjo was born, and on the advice of a local sake shop, the new "Yamamoto" brand was created.
