Description
Five Akita rice varieties — Sake Komachi, Miyama Nishiki, Gin no Sei, Misato Nishiki, and Kairyo Shinko — are used across five separate fermentation stages, each paired with a different Akita yeast strain, in this experimental junmai daiginjo polished to 50%. Named 'Akita Royal Straight Flush Diamonds' to evoke the highest possible hand in poker, the concept represents an unprecedented multi-rice, multi-yeast construction believed to be unique in Akita brewing history. The result is layered and complex, expressing the full breadth of the prefecture's sake-rice heritage.
