Description

No. 7 yeast, sourced from a legendary Nagano brewery and known for producing calm, refined ginjo character, defines this 55%-polished junmai ginjo genshu from Akita. The aroma is restrained and composed, while the palate opens with gentle sweetness that gives way to a stronger acidity and clean finish compared to the No. 6 counterpart. Fermented in small batches alongside the No. 6 release as part of the brewery's annual classic-yeast comparison series.
