Description

Misato Nishiki — a rare Akita sake rice descended from Yamada Nishiki crossed with Miyama Nishiki, grown by fewer than ten farmers in the prefecture — gives this seasonal junmai ginjo its distinctive character. Fresh green apple aromatics lead into a juicy, moist fruitiness backed by a bright, clean acidity and a crisp finish. Polished to 55% and released in limited quantities, it showcases the expressive potential of one of Akita's most difficult-to-cultivate heritage varieties.
