Saika is the flagship sake brand of Kokonoesaika, a Wakayama Prefecture brewery established in 1908 that uniquely produces both sake and red vinegar, with a stated philosophy of bringing quality acidity to the dining table. The brewery avoids the traditional toji hiring system, instead training its own employees in brewing, and its dry junmai ginjo earned gold at the Kura Master competition held in France in 2020.
