Daijiro

Daijiro is produced by Hata Shuzo, a brewery in Shiga Prefecture known for its commitment to traditional kimoto and yamahai starter methods, which produce sake without added lactic acid and develop elevated natural acidity and rich complexity. All Daijiro sake is released as muroka (unfined) and genshu (undiluted), using locally grown Shiga rice varieties including Ginfubuki and Watarebune alongside Yamada Nishiki. The bold, full-bodied style appeals to drinkers who favor vigorous, food-driven sake with depth and structure.
