Description
This kimoto junmai is pasteurized, then aged three years at room temperature undiluted at a moderate 16 percent alcohol. It shows notes of straw, vanilla, roasted soybean flour and rice bran, leaning spicy, dry and toasty. The extended room temperature aging gives it a moody, deepened character that shows especially well served warm.
