
Description
This hiire (pasteurized) version of Daijiro Junmai from Hashimoto Shuzo in Shiga undergoes heat treatment to stabilize the sake for longer storage. The pasteurization process develops a softer, more integrated flavor compared to the namazake version, while retaining the characteristic rice-forward umami of Shiga brewing.
