This hiire (pasteurized) version of Daijiro Junmai Ginjo from Hashimoto Shuzo in Shiga undergoes heat treatment to achieve flavor stability and develop a more rounded, integrated character over time. Pasteurization tames the more volatile aromatic compounds, resulting in a sake with deeper, more settled ginjo qualities suited for aged storage.
