
Description
Organically cultivated Yamada Nishiki of the finest head-grain grade is polished to 40% for this junmai daiginjo from Ishikawa's oldest brewery, founded in 1625. The sake opens with a composed ginjo fragrance, followed by a rich, expanding umami that then resolves with the clean, sharp exit that defines the Kagatobi house style. Kaga tori, the legendary Edo-period fire brigade of the Kaga domain, lends the label its spirited identity.
