Kawashima Shuzo was founded in 1865 on the shore of Lake Biwa in Takashima, Shiga Prefecture, and takes its brand name Matsunohana, meaning flower of the pine, from a pine tree that stood on the brewery's land before construction began. Using abundant groundwater from the Hira Mountains and locally grown sake rice, the brewery practices traditional winter-only kanzukuri brewing, seeking to produce sake with minimal intrusive character so it complements rather than competes with food. Over more than 150 years of production, Matsunohana has developed a reputation for clean, non-tiring sake that pairs broadly across Japanese cuisine.
