
Sur Lie is an autumn-limited release that blends raw sake and bottle-pasteurized sake (50/50), then aged in contact with the lees in the sur lie style borrowed from winemaking. Contact with the yeast sediment adds amino acids and roundness, yielding a smooth, gently sweet texture with heightened umami.
