Karakuchi Yamahai Tokubetsu Junmai Asahi Kasui Hiire is a yamahai-method sake from Ookurahonke in Nara, pasteurized using the gentle kasui running-water technique to stabilize flavor while preserving complexity. Brewed with Asahi rice without added alcohol, it carries the hallmark dry, earthy, and robust character of the yamahai style. The careful pasteurization allows this sake to develop gracefully over time with the depth typical of yamahai production.
