nondo is a doburoku (unfiltered rice wine) producer founded in Tono City, Iwate Prefecture, led by brewer Yotaro Sasaki, who trained as a chef before dedicating over a decade to mastering the craft. The brewery revived Tono Ichigo, a heritage rice variety once grown in the region but long out of production, using it as the base for its flagship Toono Doburoku. Fermentation lasts more than a month, followed by nearly six months of aging, and no additives are used, resulting in a richly layered, creamy sake that elevates an ancient folk-brewing tradition to a refined level.
