The guiding concept is captured in the phrase a night's comfort over a glass of surprise, prioritizing sake that can be drunk for hours without fatigue over anything dramatically aromatic. Traditional yamahai fermentation is used in several expressions each year, producing a structured, dry character with persistent umami.
