Higashiiida Shuzoten, founded in 1865 in Shinonoi, Nagano City, draws brewing water from the Sai River aquifer, a naturally filtered source running through a shallow sand and gravel layer beneath the Nagano basin. The brewery has remained dedicated to local Nagano ingredients since its founding, and its earthen storehouse and historic brewery buildings are registered as National Tangible Cultural Properties of Japan.
