Kizakura Co., Ltd. was founded in 1925 by Matsumoto Jiroku in Fushimi, Kyoto, building on the famous soft groundwater of the district to produce sake under the motto quality-first brewing. The kappa water sprite became the brand's iconic mascot through mid-twentieth century advertising campaigns that helped establish Kizakura as a nationally recognized label, with flagship expressions including the long-selling Kinboshi Kizakura, Ton, and Yamahaiikomi ranges. Beyond sake, the brewery operates craft beer production, a sake museum, and restaurants in the Fushimi district, making Kizakura a center of Kyoto's fermentation culture as it marks its centennial.
