Daigorei is the flagship brand of Bajo Shuzo, founded in 1893 in Kumano-cho, Hiroshima Prefecture, where the sake became known locally as phantom sake because it was rarely found outside the immediate community. The brewery was once on the verge of closure but was revived through the conviction of a new master brewer committed to keeping traditional methods alive, including steaming rice in iron kettles and wooden steamers, naturally cooling it, culturing koji on small futa boxes, and pressing moromi in a traditional wooden vat. Bajo Shuzo has also begun brewing with Hokkaido sake rice varieties, supported by a partner in AZE Co., Ltd.
