Founded in 1602 by Migita Somi in Masuda City, Shimane Prefecture, Migita Honten holds the distinction of being the oldest sake brewery still in operation in Shimane. The Somi brand is brewed using underground water drawn from the Masuda River, and the brewery also produces Yozaemon, a recently revived sake styled after a 16th-century recipe.
